
PAELLA ARAGONESA
Traditional Spanish Food Paella
Recipe for Paella Aragonesa with rabbit meat, squids and river crabs for 4 persons.

Spanish Paella Ingredients:
4 cups of rice for paella
500 grams (1 pound) of soft rabbit meat
2 cleaned squids
8 river crabs
2 red sweet pepper, cut into slices
150 grams (5 oz) of peas
3 cloves of garlic
1 onion
1/2 glass of white wine
1 laurel leaf
parsley, saffron, salt and pepper to taste
1/2 cup of olive oil
Recipe paella aragonesa:
Fry sweet pepper cut into strips for garnish. Wash and clean crabs and cook them with half a liter boiling of water, one laurel leaf, 1/2 cup of white wine and salt to taste.
Cut squids into rings, rabbit into chunks. Fry rabbit meat separately in a wide pan with hot olive oil. Add salt and minced garlic to taste and fry until browned. In continuation, add squids, peas and onion. Wet it with a bit of water and cook until all meat is tender.
Add a half of fried sweet pepper and paella rice, and mix well. While cooking, add 10 cups of boiling water. Prepare and mash 1 clove of garlic, saffron and parsley in mortar and pestle with a bit of water. Pour it to paella and distribute uniformly. Cook paella on medium fire for about 10 minutes. Finally, put river crabs on the top and cook for about 10 minutes more. Once water is evaporated and rice is ready, take paella away from fire and decorate with strips of red and green pepper. Let it rest for 5 to 10 minutes before serving.
