Recipe for Paella de la Huerta
Recipe for Paella de la Huerta (vegetarian paella) with artichokes, cauliflower, beans, and aubergine for 6 persons.

Paella ingredients:
- 3/5 cup of olive oil
- 2 cloves of garlic
- 3 artichokes
- 400 grams of rice for paella ( 1 pound)
- a bit of saffron (1/4 teaspoon)
- 1 aubergine
- 1 zucchini
- one vegetable broth cube
- 20 grams (3/4 oz) of onion
- 300 grams (10 oz) of cauliflower
- 100 grams (3 oz) of tender beans
- 150 grams (5 oz) of green beans
- 1 spoon of sweet Spanish paprika
- 2 natural grated tomatoes
- salt and pepper to taste
Vegetarian Spanish Paella recipe:
Cut all vegetables (except onion and garlic) into pieces 3 to 4 cm long (about 1 – 2 inches) and cook them in boiling water. When vegetables are cooked, put this water aside for later use.
Warm-up olive oil in the paella pan and add chopped onion. Once the onion is browned, put the rest of the previously cooked vegetables and fry on low heat for 15 minutes, moving frequently with a wooden spoon. Thereafter, add grated tomato and fry for 5 minutes more. In the end, add sweet Spanish paprika, mix, and about 1 minute later add paella rice, minced garlic, and saffron.
Mix all together, fry for about 1 minute more, and finally pour in previously prepared vegetable broth (water). Continue cooking for 15 minutes more on medium heat, until rice is done and all water is absorbed and evaporated.
